About: We obtained our Gesha seeds from Francisco Serracin, of Don Pachi Estate fame, in Panama. The first farms we planted this variety on was Santa Lucia in Honduras and San Jose in Jinotega. It’s a variety that is susceptible to all major diseases, with low harvest production, but has an exceptional cup profile.

About: Genetic testing shows that the Java variety is an Ethiopian heirloom. It was taken by the Dutch to the Island of Java in the early 19th centuty where it got its name. We lovingly call it Javanica due to it’s newfound home in Nicaragua. And now in Honduras as well. Fun fact, this was our first exotic varietal we planted on the farms.
YELLOW PACAMARA

About: One of our most sought after varieties, but also one of the most difficult to work with. We first discovered this natural mutation on our farm El Limoncillo in 2004, among our Red Pacamara plot. Like in the picture, we know the cherries are in their ripest stage once they develop sugar spots. Similar to a ripe banana.
LAURINA

About: Something that immediately stands out about this variety is its naturally low in caffeine properties. Laurina has half the caffeine content of a regular Arabica variety. This makes it less bitter than other varieties, but makes it a target for pests. We absolutely love to process this variety as a traditional Natural or experimental whole cherry fermentation. It gives the inherent fruit notes and sweetness a platform to shine brighter in the cup.

About: Is a cross between a Maragogype and Pacas varietals that was developed in El Salvador and eventually found a new home on our farms in Nicaragua. A versatile variety that shines in any post-harvest process we put it through. It also gifts us our Peaberry offerings which retain the Red Pacamara’s character but with a greater concentrated sweetness.

About: Also called Centroamericano, this variety is an F1 hybrid that is a cross between a Sarchimore and Sudan Rume. A fairly new variety for us, it has quickly become a favorite both at the farm level and in the cupping lab. Its resistance to coffee leaf rust and improved harvest production make it a variety worth planting more of. You can get a first harvest in year 2, and a fantastic cup profile in any post-harvest process.
RED CATUAI

About: A cross between a Mundo Novo and Caturra, Red Catuai is a compact plant that has a good production yield and can give a good cup quality with proper processing. It is the most planted variety on our farms. We use it as a “test” varietal whenever we are working with a new farm since we are very familiar with the conditions and nutrition that it requires to thrive, and it allows us to determine what other varietals will work in those conditions.

About: A natural mutation of Red Pacas, we actually obtained our Yellow Pacas seeds from our Yellow Pacamara. The Pacamara variety is a hybrid, an unstable one, that sometimes reverts back to one of its original components, Pacas or Maragogype, about 10-12% of the time in the nursery. From our Yellow Pacamara nursery we noticed some plantlings were a different size and had smaller leaves, and we recognized it as Pacas. It wasn’t until we planted it that we discovered it ripens to yellow!
ORANGE BOURBON

About: This variety is a natural mutation of Red Bourbon. The seeds were brought over from El Salvador by our uncle Alejandro Saldana, his home country, and who owns finca El Suspiro. He planted Orange Bourbon first on his farm and received praise for the quality from foreign. We then kindly asked for some seeds and have since planted it both on our farms in Nicaragua and Honduras. Its orange ripening color makes it a challenge for hand harvesting but we’ve come to master it.

About: Red Bourbon is one of the most important varieties in the world, which crossbred with other varietals has led to offspring such as Red Catuai and Caturra. We obtained our seeds from El Salvador in the mid-90s, and although susceptible to all major diseases, the variety we use when we experiment with new processes and fermentations, like Cold Anaerobics.
CATURRA

About: Caturra is a natural mutation of the Bourbon varietal that was discovered on a plantation in Brazil in the early 1900’s. It has since become of the most common varieties in Central America, and Nicaragua in particular. Due to its good production and its mild-resistance to diseases, locally the variety is called the “Noble Variety”.

About: Its complex genetic diversity gives this variety resistance to coffee leaf rust and high production yields compared to a Caturra, along with a vibrant cup profile. It’s our “work horse,” and has slowly found a home on most of our farms in both Honduras and Nicaragua. Its adaptability to different microclimates helps us plant it in both origins.

About: Pacas is a natural mutation of Bourbon that was discovered by the Pacas family from El Salvador in 1949. We obtained our seeds from El Salvador, and we have been growing it since 2005. Although it’s very susceptible to coffee leaf rust, the cup quality can really stand out. We do not plant a lot of it but it truly shines as a Washed or Natural post-harvest process. Be on the look out for its other color ripening cousins.

About: A natural mutation of our Red Pacas, that ripens to an orange hue. It has more tolerance to coffee leaf rust than its Red and Yellow cousins but it’s too early to tell if this trait will continue in future generations. We only have a handfull of trees in production and a new plot on San Jose.
JAVA CATURRA

About: Java Caturra is not a blend, it’s a natural mutation of our Javanica variety that happened naturally on our farm San Jose around 2004/2005. The reason it was dubbed with the “Caturra” name is because the structure of this tree is more compact and small, very similar to the Caturra variety. Nevertheless, the tree still produces elongated beans like Javanica, but also smaller and rounder beans.

About: Only found in our variety garden at La Escondida at this time, it has better resistance to coffee leaf rust and production compared to its Red ripening cousin. Its cup profile is vibrant and fruit forward, while still having a silky sweetness. We’re still figuring out where else to plant it, but be sure it’s coming soon.
MARAGOGYPE

Nicaragua: Laguna Verde
About: Maragogype is a natural mutation of Typica that was discovered in the Brazilian town of Maragogipe in the late 1800’s. It has since become a very popular variety due to the very large beans (Elephant Beans) it produces. Maragogype has been used to create new hybrid varietals, the most famous being Pacamara (cross between Pacas and Maragogype) and Maracaturra (cross between Maragogype and Caturra).

About: Is supposedly a natural cross between a Catimor and Pacamara that was discovered in Guatemala. It obtains its resistance to coffee leaf rust from the Catimor genetics whereas its delicious cup quality from the Pacamara genetics. We’ve planted some on La Huella and it’s already bearing its first fruits.

About: Parainema was developed in Honduras and is well known to have an amazing cup profile that, has led many to dub it the “Gesha of Honduras”, while also being productive and tolerant to diseases. We’re expecting our first harvest in 2026.
